(Traditional Italian almond flour cookies. Who knew they would know that they are gluten free, dairy free, and almost sugar free!)
- 2 eggs whites beaten until fluffy
- 2 C almond flour
- 1.5 tsp cinnamon
- 1.5 tsp lemon extract
- 1/2 C honey
- pinch of salt
Preheat oven to 325F.
Fold almond flour in to egg whites, then mix in other ingredients. Let mixture chill in the fridge for 1 hr.
Remove and set spoonfuls on parchment lined baking sheet.
Cook for 20 min until slightly golden brown, then turn oven off and let sit in oven for 15 min. Remove and cool on cooling racks.
Makes 12-16. Enjoy!
